PORK MEDALLIONS IN BEER AND MUSTARD

1 1/2 lbs pork tenderloin
flour for dusting
salt and pepper
2 to 3 TBS olive oil
1 cup of full bodied beer
 2 TBS Dijon mustard
1/2 tsp dried thyme
1/4 to 1/2 cup cream

Slice pork into thick medallions. Dust generously with flour and sprinkle with salt and pepper. In a large, no stick skillet, saute all the medallions, turning them for 3 to 4 minutes until they are well browned. Pour n beer, blend in mustard and add the thyme. Reduce the heat and simmer for 8 to 10 min.  Add the cream and generously season with salt and black pepper. Simmer another 5 minutes and serve.

BROWN SUGAR AND BALSAMIC GLAZED PORK LOIN

1 (2 LB) boneless pork tenderloin
1 tsp ground sage
1/2 tsp salt
1/4 tsp pepper
1 clove garlic, crushed
1/2 cup water

GLAZE:
1/2 cup brown sugar
1 TBS cornstarch
1/4 cup balsamic vinegar
1/2 cup water
2 TBS soy sauce

Combines sage, salt, pepper, and garlic and rub over roast. Place in slow cooker with 1/2 cup of water. Cook on low for 6 - 8 hours. About 1 hour before roast is done, combine ingredients for glaze in small sauce pan. Heat and stir until mixture thickens. Brush roast with glaze 2 or 3 times during the last 1 hour of cooking. Serve with remaining glaze on the side.

Apple Butter Pork Loin


2 (1 1/2 lb) pork tender loin
seasoning salt to taste
2 cups apple juice
1/2 cup apple butter
1/4 cup brown sugar
2 tablespoons water
1/4 teaspoon cinnamon

Pre-heat oven to 350* ~ season pork with seasoning salt and place in 9x13 baking dish ~ pour apple juice over the pork and cover dish with foil ~ bake 1 hour ~ mix together apple butter, brown sugar, water, and cinnamon ~ after the hour remove the pork from the oven and spread apple butter mixture over them ~ Cover and return to oven for 2 hours or until fork tender.

Carrie's Easiest Crock Pot Pulled Pork BBQ

Ingredients:
2 lbs of pork shoulder roast
1 beef bouillon cube
salt and pepper
1 can chicken broth
1 bottle of BBQ sauce
Rolls or buns for serving

Place pork shoulder in crock pot. Pour in chicken broth and add bouillon cube, salt and pepper. Add enough water to crock pot to cover the pork roast. Cook on low heat for 6-8 hours or until pork pulls apart with fork. Remove from crock pot and place in casserole dish. Using two forks, shred pork. Pour BBQ sauce over meat mixture and mix well. Bake approximately 30 minutes or until BBQ sauce has set well into the pork. Serve on buns or rolls. Add a side of baked beans and french fries and voila ... you have the easiest, yummiest weekend dinner ever!
